Homemade Tagalongs

In a cookie rut and looking to fulfill a photo prompt, I turned to Pinterest. Duh. Not far into my search, I came across a recipe for homemade Tagalongs. You know, those peanut butter filled goodies that only come 'round once a year.

You can get this recipe for Left-Behinds, as they call them, complete with illustrations courtesy of Chow.

They were pretty darn easy. The base cookie came together effortlessly, and the peanut butter mix was also a breeze. I ran out of regular creamy peanut butter and filled in the gap with Smucker's Natural PB, so I gave it a little whirl with the hand mixer to smooth it out.

Then came the dipping part. Oh, yes. Let me start by saying that I suck at dipping things in chocolate. I have ruined countless bags of chips because I have a knack for 'seizing' chocolate, as they call it. You know, that grainy, waxy ball of oops that forms.

I think there are a few things at play here: First, I seek out dairy-free chocolate so Kiddo can enjoy my creations. That often means non-milk chocolate chips, which I'm guessing are a bit waxier (i.e. thicker upon melting) so they hold their shape in cookies etc. Just a thought. Second, I am totally inept when it comes to keeping things dry and gauging the amount of melting time. Third, I am a complete and total spazz.

I tried some sort of fork method, then a spatula, then my fingers. By the time I was done, I had chocolate on the floor, all over my sleeves and hands, and later I discovered a clump in my hair. But hey, they were good. And that's all that really matters in the end, no?
